Lime-Basil Chicken Thighs with Corn

September marks the end of summer, but we’re not ready to say goodbye just yet. Relish the last bit of the season with Lime-Basil Chicken Thighs with Corn – an easy and delicious dish for those final summer nights.

Olive oil is the star ingredient. Healthy fats may reduce the risk of developing cardiovascular disease and lethal prostate cancer, so you’ll be eating well for your body and your taste buds. And with the addition of fresh corn and basil, you’re sure to taste summer in every bite. Serve with a simple green salad.

Lime-Basil Chicken Thighs with Corn

Prep time: 30-45 minutes

Cook time: 30-40 minutes

Serves: 4

Ingredients:

  • 2 lbs boneless, skinless chicken thighs
  • 3 garlic cloves, grated
  • 5 tbsp olive oil
  • 2 limes
  • 1 cup basil leaves, finely chopped
  • 4 shucked ears of corn
  • Salt and pepper

Directions:

  1. Preheat oven to 405 degrees Fahrenheit.
  2. Place the chicken in a large mixing bowl. Add the grated garlic, 1 tbsp olive oil, two pinches of salt, and juice of 1 lime. Toss to coat and let sit for at least 30 minutes in the refrigerator.
  3. Use a sharp knife or a corn stripper to remove the kernels from the cob. Set corn aside.
  4. In a bowl, mix 3 tbsp olive oil, ¾ cup basil, a pinch of salt, and 1 tsp pepper.
  5. Place chicken in a cast iron skillet or large baking pan and bake for 30 minutes.
  6. While the chicken bakes heat 1 tbsp olive oil in a skillet. Saute the corn over medium heat until slightly golden.
  7. Place sauteed corn on a serving platter and top with some of the basil mixture.
  8. When ready, remove the chicken from the oven and let it sit for 10 minutes.
  9. Slice the chicken thighs in half and place the halves on top of the corn.
  10. Spoon the remaining basil mixture, juice of ½ of a lime, and a bit of lime zest over the chicken. Finish with a pinch of salt and pepper.
