Middle Eastern Chicken Kabobs
¾ cup | non-fat plain yogurt |
1½ pound | boneless chicken white meat (large cubes) |
2 tsp | fresh mint |
saffron threads bloomed in water (hot, but not boiling for 15 min) | |
¼ tsp | granulated garlic |
1 tsp | fresh minced garlic |
1 tsp | fresh minced shallot |
to taste | sea salt |
- Combine all spices with yogurt.
- Marinate cubed chicken overnight.
- Skewer chicken and grill.
- Serve with hummus and pita.
