Raspberry Chocolate Walnut Groovy Blondie
1 1/2 cups | all-purpose flour |
1/2 cup | oats |
1 tsp | baking soda |
1/4 tsp | sea salt |
1 cup | organic light brown sugar |
1/2 cup | orange olive oil or mild flavored extra virgin olive oil |
1 tsp | orange zest |
3/4 cup | egg substitute |
1 tsp | vanilla extract |
1/2 cup | walnuts |
1/2 cup | dark chocolate chips |
1 cup | raspberries |
- Sift flour, sugar, baking soda and sea salt.
- Add oats to sifted dry ingredients.
- Mix olive oil, vanilla and egg substitute and set aside.
- Place dry ingredients in the bowl of an electric mixer.
- Slowly add wet ingredients. Mix on low speed for 2 minutes.
- Scrape down sides.
- Add chocolate chips, orange zest and walnuts. Mix for 30 seconds.
- Fold in raspberries by hand.
- Bake at 350 degrees in a 9X9 square pan for 25-30 minutes.
- Let cool.
- Cut into squares.
- Serve with your favorite frozen yogurt, berries, and a sprig of fresh mint.
