Gingerbread Cake with Sautéed Pears
1/2 cup | applesauce |
2/3 cup | apple juice |
1 cup | light molasses |
2 each | egg whites |
3/4 cup | spelt flour |
1 1/2 tsp | baking soda |
1 1/2 tsp | cinnamon |
1/4 tsp | nutmeg |
1 1/2 tsp | fresh ginger (grated) |
1/2 tsp | sea salt |
1 tsp | orange zest |
- Sift dry ingredients.
- Mix wet ingredients.
- Place dry ingredients in a mixing bowl and add wet ingredients in increments of three.
- Mix well.
- Pour in a loaf or spring form pan that is sprayed with canola spray.
- Bake in a 350 degree oven for 45 minutes or until a toothpick comes out clean.
- Serve with sautéed pears.
Sauetéed Pears
4 each | pears (peeled and sliced thin lengthwise) |
1/4 cup | maple syrup or agave |
1/4 tsp | nutmeg |
1 1/2 tbsp | vanilla yogurt |
1 tsp | vanilla extract |
- Place pears in a sauté pan with all ingredients.
- Heat until syrup reduces by half.
- Serve warm or room temperature with cake.
