Ingredients:
• 1 head broccoli
• 2 medium potatoes (peeled and cut into chunks)
• 7 cups vegetable or chicken stock
• to taste – sea salt
• to taste – white pepper
Directions:
1. Put all ingredients in a soup pot.
2. Place over high heat and bring to a boil.
3. Turn down to a simmer and cook for about 25 minutes or until potatoes are soft .
4. Season to taste with sea salt and pepper.
5. Blend in a blender or food processor serve hot.
You can also freeze this soup.
